The thread
A chartroom is where a ship’s course is plotted. Ardfern is the sailing village of Roberta’s childhood summers. Her cookbook is The Changing Tides.
The sea has quietly named everything this kitchen has ever opened. The Little Chartroom for the love of sailing. Ardfern for the Argyll harbour where the summers were spent. The book, for the tides that set what lands on the boats — and on the plate.
Three rooms, one crew, one course — hyper-seasonal Scottish cooking that stays, in Roberta’s words, interesting but accessible, never pretentious. This page is the chart that finally joins them up.

Roberta & Shaun.
Roberta Hall-McCarron started in Edinburgh kitchens at sixteen and worked her way through some of the best — then won the fish course on BBC’s Great British Menu in 2021. “That’s when everything really started to explode… in the middle of lockdown.”
Shaun McCarron runs the rooms — co-owner and restaurant manager, front of house across all three.
Together they’ve built a small fleet with one style: hyper-seasonal, Scottish, and never pretentious.
